This was a really good weekend. It all started with my new internship "orientation" on Friday afternoon. Such a wonderful improvement! I am so looking forward to the next 8 weeks.
Then, Saturday, took Austin to the mall for some early birthday shopping (since he will not be here for his actual day of birth). The sun finally came out. Then the entire fam went out to Shelley and Jonathan's to hang out. Lon and the dogs met us there. We brought dinner and desert so she did not have to do a thing. It was a really good and much needed time for us all.
Sunday, today, Father's Day, we started the day off with 8am mass and a sky with sun and a few fluffy white clouds. Fr Jack (JD) said mass. He was our seminarian awhile back and he was recently ordained and so he came back to say mass. Such a wonderful thing to see how he has grown, from being nervous while he said the announcements to a great homily!
After mass we came home and while dad cooked ham, I made everyone an omelet to order! Yum! Nothing like a selection of cheddar, pepper jack, Swiss and/or Parmesan cheese (I like cheese, can you tell?), browned onions and garlic, sun dried tomatoes and ham.
Dad opened his gifts which included a new tripod for his camera, an outdoor table to go with the new chairs, and a fire place thingy (he has burned through 2 terracotta chimeneas since we have been here so we went with a metal one to see how long it lasts).
Midday snacks of 4 types of hummus, a selection of crackers, flax veggie corn chips, grapes, and garlic cheddar bread.
Dinner was chimichurri sauce on grilled salmon (with a rosemary, cilantro, sea salt rub), grilled zucchini and dad's favorite cucumber and onion (in a vinegar/sugar sauce) salad. Oh my gosh. I have never made chimichurri sauce before, but we have so much cilantro in the garden that I used that and our Italian flat leaf parsley. It was so good! It was even good on the zucchini!
It was a great weekend.
